SLOW COOKER PORCUPINE MEATBALLS

1 lb ground beef or turkey
1/2 cup brown rice uncooked
1/2 cup shredded carrot
1 egg
Salt and pepper
28 oz tomato sauce
2 cups water
1/4 cup chopped onion
2 chopped garlic cloves
1 tablespoon brown sugar
1 1/2 tablespoon worcestershire sauce
1/2 teaspoon oregano
1/2 teaspoon thyme
1 small bay leaf


Combine ground beef or turkey, brown rice, carrot, egg, salt and pepper. Using a 1/4 measuring cup for each, make 14 meatballs and place in slow cooker. In another bowl, mix together remaining and pour over meatballs. Cook on high for 3 hours or on low for 6 hours. So easy, so simple and delicious! Enjoy!

TROPICAL CHICKEN

4 chicken breasts
1 cup flour
Salt and pepper
2 tablespoons butter
2 tablespoons oil
1 can 15 ¼ oz pineapple rings
1 ¾ cup orange juice
1 teaspoon grated ginger
2 tablespoons soy sauce
2 chicken boullion cubes
½ cup sugar
1 tablespoon cornstarch

Preheat oven to 350 degrees. Put flour in bowl or bag and generously season with salt and pepper. Add chicken and coat well. Heat butter and oil in large pan over medium heat. Add chicken and cook on both sides until golden brown. Remove chicken and set on paper towel. In a medium sauce pan, add juice from pineapple rings, orange juice, ginger, soy sauce, chicken boullion cubes, sugar and cornstarch. Gradually bring to a boil. At boiling point, remove immediately from heat. If you don't remove immediately from heat, you will get a hot, boiled over mess. Place chicken in baking dish, I use 9x13, and pour sauce over chicken. Top each piece of chicken with a pineapple ring and bake for 45 minutes. Serve with white rice. Enjoy!

REALLY YUMMY RIBS

3 lbs. pork baby back ribs
Seasoned salt
Lemon pepper
BBQ sauce  - I like Kraft original or Sweet Baby Ray's original

Preheat oven to 300 degrees. Line cookie sheet with 2 layers of foil. If possible (sometimes it's just too darn hard to get off), remove sinew from back of ribs. Generously season ribs with seasoned salt and lemon pepper. Put ribs bone side up on cookie sheet and cover with 2 layers of foil. Bake for 2 hours. Remove foil and brush ribs with your favorite BBQ sauce. If you like a lot of sauce, put a lot of sauce on. If you like a little sauce, put a little sauce on. Cook for 30 more minutes uncovered. Enjoy!

COWGIRL CASSEROLE

1 lb ground beef or turkey
1 can Ranch Style Beans
1 can Rotel
8 corn tortillas
1 16 oz container sour cream
2 cups cheese

Heat oven to 375 degrees. Brown ground beef and season with salt and pepper to taste. Stir in beans and Rotel. Spray 9x13 pan with cooking spray. Spread 1/2 of the meat mixture on the bottom of the pan. Top with 4 corn tortillas. Add remaining meat mixture and top with 4 corn tortillas. In a separate bowl, combine sour cream and 1 cup cheese. Spread evenly over corn tortillas and top with 1 cup cheese. Cook 40-45 minutes until bubbly and cheese is golden brown. 


This is so easy to make and delicious! You gotta try it for dinner tonight! I serve this with spanish rice. Enjoy!



SPANISH RICE

1 tablespoon butter
1 cup white rice
1/2 can petite diced tomatoes and juice
1/2 tablespoon garlic powder
1/2 tablespoon salt
1/2 teaspoon pepper
2 cups water

Melt butter over medium high heat. Add rice immediately so butter doesn't burn. Cook, stirring constantly, for 3-5 minutes until rice is golden brown. Add tomatoes, garlic powder, salt, pepper and water. Bring to boil. Reduce heat to simmer, cover and cook for 20 minutes, until rice is tender. Fluff with fork.

Top with a dollop of sour cream.. delicious!

BLTC BAGEL

6 slices bacon
2 onion bagels
cream cheese 
lettuce 
sliced tomatoes

Cook bacon and toast bagels to your liking. Spread both sides of bagel with cream cheese. Add lettuce, tomatoes and 3 slices of bacon.

SUPER EASY CHEESY SPAGHETTI

1 lb ground beef or turkey
Salt and pepper to taste
2 cans spaghetti in tomato sauce with cheese
1/2 cup tomato soup
4 oz Velveeta

Brown ground meat with salt and pepper to taste. Add spaghetti, soup and Velveeta. Cook over medium heat until Velveeta is melted and spaghetti is heated through. I serve this dish with a simple garden salad of lettuce, tomato, cucumber with ranch dressing and garlic bread.
